In the past five years it seems the words “gluten free” have started popping up everywhere. More and more people are saying they are allergic to gluten and you see labels of “gluten free” appearing on foods that you would never have thought had gluten in them. Restaurants and bakeries are offering gluten free alternatives and it often makes people ask, what is gluten and why is it so bad for people? Is it bad for me?
Gluten is a naturally occurring protein found primarily in wheat, rye and barley. It is also a very widely used food additive and is found in all sorts of processed foods making it a challenge for people who have allergies. Celiac disease is an autoimmune condition which makes it impossible for them to process gluten. People suffering from Celiac disease are unable to properly digest any gluten they eat and it can cause significant damage to their small intestine if they consume foods containing gluten.
I was astounded to find out that an estimated 1 in 133 people have celiac disease and many more people are sensitive to gluten in varying levels. Awareness is key as many people are completely unaware that foods containing wheat could be an issue for them. This is why education is so important as it can spawn a movement pushing for more gluten-free foods to be readily available and for labeling to more clearly show when a food contains gluten.
